What was your dinner tonight?
We had a great time in Koh Samui, Thailand for 4 days but we started feeling unwell on the very last day. But today my daughter went back to school and my husband and I had a busy day to catch up with work.
After a break usually we need to work harder!
But I feel very unwell and decided to make Samgyetang (Korean Ginseng Chicken soup) for dinner tonight.
Samgyetang(???) is very popular dish during summer season in Korean to boost energy and recover from fatigue from prolonged heat.
Sam refers to ginsent and gye means chicken. Tang means a soup.
Generally we use a young chicken to make Samgyetang but if you cannot get it, you may alternatively use small fresh chicken.
Today I used about 800g of fresh chicken from Isetan in Singapore.
Generally a chicken is stuffed with glutinous rice, jujubes, garlic, ginger and ginseng.
For my daughter I used Le creuset:)
Add salt and pepper when you eat. I add radish kimchi too:)
