Oi-sobagi is cucumber kimchi. Making a pocket in cucumber and stuffing vegetable kimchi paste.
Cucumber is a summer vegetable and this kimchi is made a lot in summer.
(well… Singapore is always in summer tho!)
This kimchi does not need to be fermented. People enjoy this kimchi right away!
Very refreshing, a bit spicy and crunchy.
