In Korea there are hundreds of varieties of kimchi and there are uncountable ways to make kimchi depend on region or families!
My way to make kimchi is of course based on my Omma(mummy)’s way.
Passed on to the next generation.
I am not sure my daughter Sophie will make a kimchi in the future but if she remembers my taste, that’s good enough for me.
She was born in Sydney as Australian having Chinese daddy and Korean mummy.
And she lives in Singapore currently. Her parents used to live in Japan and we sometimes use Japanese even though no one is Japanese.
Very complected. But I told her it’s kinda special! She has lots of chances to feel many cultures including cuisines!!!
Everyone has own taste. Everyone loves own mummy’s taste.
For my family and myself, my taste is the best:) Well, I hope so!!!
Since a pregnancy, my daughter Sophie has been enjoying kimchi flavor and now she loves Kimchi a lot!!!
When she eats my kimchi and screems “Yummy! But spicy!” it makes me so happy and blessed!!! This is my happiness!!!
Tonight is pork dish with my freshly made kimchi!!! Can’t wait!!!
Love a lovely day!!!
with love,
Heryong
