What was your lunch today? I cooked Korean noodle dish “Kongguksu (???)” today.
This Kongguksu is a seasonal dish in summer. A noodle is served in a chilled soy bean milk broth with some garnishes.
Boil soy beans and peel skins. Blend them with mineral water and add salt. Let it chilled in fridge.
Prepare garnishes while boiling noodle.
Add them in a noodle bowl and pour broth.
Kongguksu has lots of nutritious benefits. For example,
– recovery from exhaustion
– prevent constipation, etc.
And this noodle is very delicious too!!!
As a side dish, I made “Boiled bamboo shoot with spicy sour sauce“.
It really goes well with Kongguksu today:)
